Late summer at the farmer’s market has us yearning for that one last taste of summer vegetables. When you’re lucky enough to have beautiful fresh produce on hand, we find that simplicity is key. Here’s a summertime menu that focuses on fresh farmer’s market flavors, with no frills. These easy recipes really let the fruits and vegetables shine.

Open Face Heirloom Tomato Sandwiches

  • Heirloom Tomatoes
  • Goat Cheese
  • Avocado
  • Ciabatta Bread
  • Balsamic glaze
  • A pinch of Salt
  • A pinch of Pepper
  • EVOO

Slice the bread into two slices and drizzle EVOO and put in the oven at 350′ for 7-10 minutes (you can also just put them in the toaster). When the bread is a golden brown take out of the oven and spread on goat cheese – the goat cheese will start to melt on the warm bread! Add two slices of heirloom tomatoes (use different colors for different flavors). Add slices avocado, drizzle the balsamic glaze and top with a pinch of salt and pepper.

Zucchini Pasta with Tomatoes and Parmesan

Serves 2

  • 2 Zucchinis
  • 2 Tomatoes (Heirloom work too!) – Diced
  • EVOO
  • Salt and Pepper to Taste
  • Parmesan
  • Basil

Using a vegetable pasta maker grind each zucchini into pasta. If you don’t have one – finely chop the zucchini into small long slices (that are pasta like!). Sautee the zucchini in a pan with EVOO until it gets soft. Add in the diced tomatoes to the pan along with some grated Parmesan. Cook 3-5 minutes. Top with more Parmesan and some basil to serve.

Grilled Peaches with Local Honey and Cinnamon

Serves 2

  • 2 Peaches
  • Honey
  • 1 tsp of Cinnamon
  • Whipped Cream

Cut each peach in half and take out the pits. On a heated grill place the peaches juicy side down. Leave on grill for 5-7 minutes or until there are grill marks and the peaches are softer. Take off the grill and sprinkle cinnamon and drizzle honey over the peaches. Top with whipped cream and enjoy!
